Organic wines

Organic winemaking in France is attached to a label, on a green font it would have the letters AB or a green leaf with stars around it, the green leaf is a European label. To be organically certified a winemaker will need to prove for at least 3 years that he has respected the rules and limitations imposed by the governing body. These rules will include the things like no pesticides allowed, no non-organic fertilizers allowed in the growing process but also rules as to what additives are allowed and how much in the proper winemaking process. The only additives organic winemaking is allowed to use is sulfites but in small quantities only, these sulfites are required to stabilize a wine and avoid that the wine turns to vinegar in the bottle or as soon as it is in contact with the outside air.
