We have another category that we can outline here, it is called nature wines. These wines have only very recently received an official certification, called vin methode nature, the objective from the winemaker is to be as close as he can to a naturally fermented grape juice, i.e wine. He will not use any entrants at all nor stabilizers like sulfites, he will not use any chemicals in the vineyard either. The fermentation will take place due to the naturally present yeast on the grapes. They are also called low intervention wines. Making natural wines or zero sulfite wines is not very easy and we wouldn’t recommend people that only just start exploring wines to go to these wines. These wines can have flaws that some drinkers call very nice but others could consider the wine being off and not good for consumption. Very often the smell of yeast is very strong, or farm yard or the wines contain rests of gas from the fermentation making it slightly bubbly. No filtration will be allowed either so sediment will very often be found on the bottom of the bottle.
