François le Saint, Silex 2022, Sancerre white

François le Saint is a line of wines from one of Sancerre‘s most revered names. Established in 1749 in the heart of Sancerre, Domaine Fouassier is one of the oldest wine-growing families in the Loire Valley with a history that spans 10 generations. This sauvignon blanc is certified organic and biodynamically farmed, from 30-45 year old vines grown on a 6.26ha plot of calcareous soils. After a native ferment in stainless, it rests there for a brief time on lees prior to bottling.

Perfumed white blossoms, lemon peel, tangerine, fragrant melon, and creamy pear stream the slender palate, finishing with a dusting of almond spice.

The vineyards cover nearly 56 hectares of vines which are for 80% planted with the ancient and noble Sauvignon varietal. The remainder is planted with the delicate and elegant Pinot Noir grape. The domaine  uses traditional and artisanal methods in the vineyard and thrives to respect the environment at all cost. Three-quarters of the work is carried out by hand to respect the fragile vines. The domaine's priority is to respect the terroir and a biodynamic approach has therefore been in place in both the vineyards and the winery since 2000 when Benoit and Pierre joined the family business. The result is a truly great Sancerre where you have the feeling that you are in Sancerre when drinking this.
